Ingredients
  • 30 ml oyster sauce
  • 15 ml soy sauce
  • 7.5 ml fish sauce
  • 10 ml Thai black soy sauce
  • 10 ml Golden Mountain Sauce
  • 225 g chicken breast, thinly sliced
  • 5 ml soy sauce for marinade
  • 1.25 ml granulated sugar for marinade
  • 15 ml water for marinade
  • 150 g Chinese broccoli
  • 2 eggs
  • 4 cloves garlic, chopped
  • 10 ml granulated sugar
  • Ground white pepper, to taste
  • Neutral oil
  • 450 g fresh wide rice noodles
Method
  1. 1Combine oyster sauce, soy sauce, fish sauce, Thai black soy sauce, and Golden Mountain Sauce in a bowl and whisk.
  2. 2Marinate sliced chicken breast with soy sauce, granulated sugar, and water; toss to coat and set aside.
  3. 3Prepare Chinese broccoli by thinly slicing stems diagonally and roughly chopping leaves.
  4. 4Separate fresh wide rice noodles if they come in a block.
  5. 5Heat oil in a wok and stir-fry marinated chicken until cooked, then remove.
  6. 6Add more oil, scramble eggs in the wok, then add chopped garlic and stir-fry briefly.
  7. 7Return chicken to the wok, add Chinese broccoli stems and 2 tsp granulated sugar, stir-fry until tender-crisp.
  8. 8Add noodles and the prepared sauce, tossing vigorously to coat and cook the noodles, achieving wok char.
  9. 9Add Chinese broccoli leaves and cook until wilted.
  10. 10Season with ground white pepper and serve.
