Method
  1. 1Combine ketchup, dark sauce (oyster/soy), and white pepper in a bowl; stir thoroughly.
  2. 2Heat a wok on the stovetop, add cooking oil and clarified butter, and let it sizzle.
  3. 3Add minced garlic to the hot fat and stir briefly.
  4. 4Add thinly sliced white onions and julienned carrots; stir-fry until slightly softened.
  5. 5Push the vegetables to one side, crack three eggs into the cleared space, and scramble them; then mix with the vegetables.
  6. 6Add the cooked spiral pasta and the prepared ketchup-based sauce to the wok. Vigorously stir-fry to ensure all ingredients are well-coated with the sauce.
