Method
- 1Combine ketchup, dark sauce (oyster/soy), and white pepper in a bowl; stir thoroughly.
- 2Heat a wok on the stovetop, add cooking oil and clarified butter, and let it sizzle.
- 3Add minced garlic to the hot fat and stir briefly.
- 4Add thinly sliced white onions and julienned carrots; stir-fry until slightly softened.
- 5Push the vegetables to one side, crack three eggs into the cleared space, and scramble them; then mix with the vegetables.
- 6Add the cooked spiral pasta and the prepared ketchup-based sauce to the wok. Vigorously stir-fry to ensure all ingredients are well-coated with the sauce.
- 7Add the pre-cooked, sliced chicken, chopped red tomatoes, and diagonally sliced green onions. Continue to stir-fry until all ingredients are heated through and well combined.
