- 1/4 cup pistachios

- 2 tablespoons fennel seeds

- 1 tablespoon melon seeds
- 1 tablespoon dried rose petals
- 1/2 teaspoon saffron
- 1 tablespoon sugar
- 1 tablespoon gulkand paste
- 3 fresh betel leaves
- Ice cubes
- 1 cup milk
- Fresh red rose petals

- 1Add almonds, pistachios, cashews, black pepper, fennel seeds, poppy seeds, cardamom, melon seeds, dried rose petals, and saffron to a grinder.
- 2Blend the dry ingredients into a coarse, light brown powder.
- 3Spoon the prepared Thandai powder into a jar.
- 4Place a spoonful of the prepared Thandai powder into a small jar.
- 5Pour one cup of milk over the powder and stir well to combine, forming Thandai milk paste.
- 6Pour the Thandai milk paste into a blender jar.
- 7Add 1 tablespoon sugar, 1 tablespoon gulkand paste, and 3 betel leaves (torn into smaller pieces) to the blender.
- 8Add a small bowl of ice cubes to the blender.
- 9Blend the ingredients until smooth, resulting in a vibrant green, frothy liquid.
- 10Place ice cubes into a tall glass.
- 11Pour the freshly blended Paan Thandai over the ice, filling the glass.
- 12Garnish the drink with a sprinkle of fresh red rose petals.
