  • 1/2 teaspoon saffron
  • 1 tablespoon sugar
  • 1 tablespoon gulkand paste
  • 3 fresh betel leaves
  • Ice cubes
  • 1 cup milk
  • Fresh red rose petals
Method
  1. 1Add almonds, pistachios, cashews, black pepper, fennel seeds, poppy seeds, cardamom, melon seeds, dried rose petals, and saffron to a grinder.
  2. 2Blend the dry ingredients into a coarse, light brown powder.
  3. 3Spoon the prepared Thandai powder into a jar.
  4. 4Place a spoonful of the prepared Thandai powder into a small jar.
  5. 5Pour one cup of milk over the powder and stir well to combine, forming Thandai milk paste.
  6. 6Pour the Thandai milk paste into a blender jar.
  7. 7Add 1 tablespoon sugar, 1 tablespoon gulkand paste, and 3 betel leaves (torn into smaller pieces) to the blender.
  8. 8Add a small bowl of ice cubes to the blender.
  9. 9Blend the ingredients until smooth, resulting in a vibrant green, frothy liquid.
  10. 10Place ice cubes into a tall glass.
  11. 11Pour the freshly blended Paan Thandai over the ice, filling the glass.
