  5. 5Transfer the cream mixture into a small saucepan on a gas stove and cook over a low flame, stirring constantly until it comes to a gentle simmer and slightly thickens.
  6. 6Remove the saucepan from the heat, pour the freshly squeezed orange juice into the mixture, and stir again to fully incorporate.
  7. 7Pour the entire posset mixture through a fine-mesh sieve over a measuring cup to remove any larger pieces of zest or impurities, ensuring a smooth final product.
  8. 8Carefully pour the strained, smooth mixture into the hollowed-out orange peel halves and any remaining into a small clear glass ramekin, then place them in a refrigerator to set for a few hours.
