- 5Transfer the cream mixture into a small saucepan on a gas stove and cook over a low flame, stirring constantly until it comes to a gentle simmer and slightly thickens.
- 6Remove the saucepan from the heat, pour the freshly squeezed orange juice into the mixture, and stir again to fully incorporate.
- 7Pour the entire posset mixture through a fine-mesh sieve over a measuring cup to remove any larger pieces of zest or impurities, ensuring a smooth final product.
- 8Carefully pour the strained, smooth mixture into the hollowed-out orange peel halves and any remaining into a small clear glass ramekin, then place them in a refrigerator to set for a few hours.
- 9Garnish each set posset in an orange peel with a fresh, small mint leaf before serving.
