Ingredients
  • Malai from 1 medium-sized tender coconut

Method
  1. 1Halve a fresh green coconut and carefully scrape out the soft white malai (flesh) using a knife.
  2. 2Transfer the scraped coconut malai to a blender and blend until it forms a smooth, thick coconut cream.
  3. 3Pour the blended coconut cream into a mixing bowl, drizzle honey over it, and whisk gently to ensure the honey is well incorporated.
  4. 4Add pre-prepped chopped fruits, including strawberries, blueberries, green grapes, and pomelo or grapefruit segments, to the sweetened coconut cream.
  5. 5Add additional chopped coconut malai for extra texture.
  6. 6Add the already boiled and translucent sabudana pearls to the mixture.
  7. 7Gently stir all ingredients in the bowl with a spoon to ensure an even distribution of fruits and sabudana within the creamy coconut base.
  8. 8Spoon the finished pudding into individual serving glasses or bowls.
  9. 9Chill the pudding before serving and garnish with chopped nuts, fresh mint leaves, and pomegranate arils.
