Ingredients
- Malai from 1 medium-sized tender coconut
- Additional chopped coconut malai
- 2-3 tablespoons honey
- 1/2 cup diced strawberries
- 1/2 cup blueberries
- 1/2 cup green grapes
- 1/2 cup pomelo or grapefruit segments
- 1/2 to 3/4 cup boiled sabudana pearls

Method
- 1Halve a fresh green coconut and carefully scrape out the soft white malai (flesh) using a knife.
- 2Transfer the scraped coconut malai to a blender and blend until it forms a smooth, thick coconut cream.
- 3Pour the blended coconut cream into a mixing bowl, drizzle honey over it, and whisk gently to ensure the honey is well incorporated.
- 4Add pre-prepped chopped fruits, including strawberries, blueberries, green grapes, and pomelo or grapefruit segments, to the sweetened coconut cream.
- 5Add additional chopped coconut malai for extra texture.
- 6Add the already boiled and translucent sabudana pearls to the mixture.
- 7Gently stir all ingredients in the bowl with a spoon to ensure an even distribution of fruits and sabudana within the creamy coconut base.
- 8Spoon the finished pudding into individual serving glasses or bowls.
- 9Chill the pudding before serving and garnish with chopped nuts, fresh mint leaves, and pomegranate arils.
