Ingredients
- About 1.5-2 cups Makka ka Atta (corn flour)
- About 1-1.5 cups Maida (all-purpose flour)
- About 1 teaspoon Salt
- A pinch Haldi (turmeric powder)
- Water as needed (starting with about 1/2 cup)
- About 1 tablespoon oil
- A handful chopped fresh cilantro
- About 1/2 cup chopped red onion
- About 1 cup chopped tomatoes
- About 1/2 teaspoon Salt
- About 1 tablespoon Green Chili Sauce
- About 1 tablespoon Red Chili Sauce or Ketchup
- Juice of about 1/2 Lemon
- About 1.5 cups grated cheese
- About 1/4 cup milk
- A pinch salt
- A pinch haldi (turmeric powder)
- Sour cream
Method
- 1Combine makka ka atta and maida in a bowl.
- 2Add salt and a pinch of haldi to the flour mixture.
- 3Gradually add water and a small amount of oil, then knead by hand into a smooth, yellow dough ball.
- 4Cover the dough with a cloth and leave it to rest.
- 5Place chopped cilantro, red onion, and tomatoes in a separate bowl for the salsa.
- 6Add salt, green chili sauce, red chili sauce (or ketchup), and lemon juice to the salsa ingredients.
- 7Thoroughly mix all salsa ingredients with a spoon.
- 8Combine grated cheese, milk, a pinch of salt, and a pinch of haldi in a bowl for the cheese sauce.
- 9Whisk the cheese sauce ingredients until a smooth, bright yellow, creamy sauce is formed, implying heating.
- 10Roll out the rested dough very thinly on a flat surface using a wooden rolling pin.
- 11Use a pizza cutter to first cut the dough into long strips, and then diagonally to create small, equal-sized triangles.
- 12Deep-fry the dough triangles in hot oil until they turn golden brown and crispy, stirring with a slotted spoon.
- 13Remove the fried nachos from the oil using a slotted spoon once cooked.
- 14Serve the freshly fried nachos piled high on a large platter with the bright yellow cheese sauce, white sour cream, and colorful red and green salsa in smaller decorative bowls.
