Method
  1. 1Heat about 1 tablespoon of olive oil in a non-stick pan.
  2. 2Add approximately 1/4 cup of minced garlic and sauté until it turns a light golden color and becomes fragrant.
  3. 3Add 1.5 to 2 cups of sliced button mushrooms and a pinch of salt, then sauté until they soften, release their moisture, and start to brown.
  4. 4Introduce about 1/2 cup each of sliced red onion, sliced red bell pepper, and sliced yellow bell pepper to the pan.
  5. 5Add a sprinkle of dried oregano or mixed Italian herbs and sauté all the vegetables together until they are tender-crisp and well combined, retaining their vibrant colors; then let them cool slightly.
  6. 6In a small metal bowl, combine approximately 1/2 cup of thick, plain hung curd, about 1/2 teaspoon of red chili flakes, a pinch of salt, about 1/4 teaspoon of freshly ground black pepper, and about 1/2 teaspoon of mixed herbs.
  7. 7Thoroughly mix these ingredients with a spoon until a smooth, speckled, and creamy paste is formed.
  8. 8Add a final pinch of fresh or dried green herbs, resembling dill or parsley, and mix them in.
  9. 9Generously apply the prepared creamy spread to one side of a toasted brown bread slice, ensuring an even coating.
  10. 10Spoon a substantial amount of the sautéed mushroom and bell pepper mixture over the spread, creating a hearty layer.
  11. 11Place the second slice of toasted brown bread on top to complete the sandwich.
  12. 12Carefully cut the sandwich diagonally into two halves with a knife and present it on a white plate, ready to be enjoyed immediately.
