Ingredients
  • 1 packet Ching's Secret Just Soak Veg Hakka Noodles
  • 5-6 cups water
  • Approximately 1/8 cup cooking oil
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup spring onion (white/pale green parts, chopped, for sautéing)
  • Additional green spring onion (chopped, for garnish)
  • 1 1/2 cups button mushrooms, sliced
  • Salt to taste
  • Black pepper to taste
  • 1 packet Ching's Secret Chowmein Hakka Noodles Masala
Method
  1. 1Boil 5-6 cups of water in a pot.
  2. 2Unpack one packet of Ching's Secret Just Soak Veg Hakka Noodles and place them into a bowl.
  3. 3Turn off the heat and pour the hot water over the noodles, ensuring they are fully submerged.
  4. 4Cover the bowl and let the noodles soak for exactly 5 minutes.
  5. 5While noodles soak, mince 1 tbsp garlic and 1 tbsp ginger, chop 1/4 cup white/pale green spring onion, and slice 1 1/2 cups button mushrooms, reserving some green spring onion for garnish.
  6. 6After 5 minutes, uncover the noodles, lift them with tongs, and transfer to a fine-mesh strainer to drain.
  7. 7Rinse the drained noodles thoroughly with cold water to prevent sticking and halt the cooking process.
  8. 8Heat approximately 1/8 cup cooking oil in a large pan over high heat.
  9. 9Add minced garlic, minced ginger, and chopped white/pale green spring onion to the hot oil, then sauté for 1-2 minutes until fragrant and slightly golden.
  10. 10Add sliced mushrooms to the pan, season with salt and black pepper, and continue to sauté until tender and golden.
  11. 11Add the soaked, drained, and rinsed Hakka noodles to the pan with the sautéed vegetables.
  12. 12Tear open and sprinkle the entire packet of Ching's Secret Chowmein Hakka Noodles Masala over the noodles.
  13. 13Using tongs, toss and mix all the ingredients thoroughly, ensuring the noodles are evenly coated and heated through.
  14. 14Add a generous amount of chopped green spring onions to the pan as a preliminary garnish, tossing briefly.
