- Moong dal
- Clarified butter or oil
- Chopped green herbs (cilantro)
- Red flakes (chili flakes or spice blend)
- Finely chopped onions
- Green chilies
- Ginger
- Various spices
Method
- 1Heat a frying pan and add a good amount of clarified butter or oil.
- 2Pour a ladleful of thick moong dal batter into the hot, greased pan.
- 3Sprinkle chopped green herbs and red flakes over the cooking batter.
- 4Cook the moonglet on one side until it is golden brown and mostly set.
- 5Flip the moonglet using two spatulas to cook the other side.
- 6Add more clarified butter or oil around the edges to help it cook and crisp up further.
- 7Once cooked through and golden on both sides, cut the moonglet into several wedges directly in the pan using a spatula.
- 8Slide the cooked and sliced moonglet out of the pan onto a plate or serving surface.
