  • Moong dal
  • Clarified butter or oil

  • Red flakes (chili flakes or spice blend)

Method
  1. 1Heat a frying pan and add a good amount of clarified butter or oil.
  2. 2Pour a ladleful of thick moong dal batter into the hot, greased pan.
  3. 3Sprinkle chopped green herbs and red flakes over the cooking batter.
  4. 4Cook the moonglet on one side until it is golden brown and mostly set.
  5. 5Flip the moonglet using two spatulas to cook the other side.
  6. 6Add more clarified butter or oil around the edges to help it cook and crisp up further.
  7. 7Once cooked through and golden on both sides, cut the moonglet into several wedges directly in the pan using a spatula.
  8. 8Slide the cooked and sliced moonglet out of the pan onto a plate or serving surface.
