- 1 cup moong dal
- 2.5 cups water
- 1 cup sugar
- 1 pinch cardamom powder
- A few strands saffron
- 1/3 cup oil
- Sliced almonds for garnish
Method
- 1Dry roast moong dal in a pan for about 8 minutes until it turns a light golden-brown color.
- 2While the roasted dal cools, prepare the sugar syrup: combine 2.5 cups water, 1 cup sugar, a pinch of cardamom powder, and a few strands of saffron in a pot.
- 3Stir the syrup mixture until the sugar dissolves and the syrup comes to a boil.
- 4Once the roasted dal has cooled, transfer it to a blender and process into a fine powder.
- 5Heat 1/3 cup oil in the same pan used for roasting.
- 6Add the moong dal powder to the hot oil and mix well, continuously stirring for about three minutes until it forms a smooth, yellow batter.
- 7Carefully pour the hot sugar syrup into the dal mixture in the pan.
- 8Stir vigorously and continue to cook until the halwa thickens to a batter-like consistency.
- 9Garnish the halwa with additional saffron strands and a generous sprinkling of thinly sliced almonds before serving.
