  • 1 cup moong dal
  • 2.5 cups water
  • 1 cup sugar
  • 1 pinch cardamom powder
  • A few strands saffron
  • 1/3 cup oil
  • Sliced almonds for garnish
Method
  1. 1Dry roast moong dal in a pan for about 8 minutes until it turns a light golden-brown color.
  2. 2While the roasted dal cools, prepare the sugar syrup: combine 2.5 cups water, 1 cup sugar, a pinch of cardamom powder, and a few strands of saffron in a pot.
  3. 3Stir the syrup mixture until the sugar dissolves and the syrup comes to a boil.
  4. 4Once the roasted dal has cooled, transfer it to a blender and process into a fine powder.
  5. 5Heat 1/3 cup oil in the same pan used for roasting.
  6. 6Add the moong dal powder to the hot oil and mix well, continuously stirring for about three minutes until it forms a smooth, yellow batter.
  7. 7Carefully pour the hot sugar syrup into the dal mixture in the pan.
  8. 8Stir vigorously and continue to cook until the halwa thickens to a batter-like consistency.
  9. 9Garnish the halwa with additional saffron strands and a generous sprinkling of thinly sliced almonds before serving.
