Ingredients
  • 1 cup shredded young jackfruit
  • 1/2 cup shredded boiled pork skin
  • 1/4 cup chopped Vietnamese coriander
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp fried shallot oil
  • 2 tbsp roasted peanuts
  • 1 tsp chopped chili
  • 1 tsp chili paste
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 large grilled rice paper cracker
Method
  1. 1Scoop shredded young jackfruit and herbs into a serving container or plate.
  2. 2Add shredded boiled pork skin on top of the jackfruit mixture.
  3. 3Drizzle generously with fried shallot oil.
  4. 4Add a dollop of chunky red chili paste on the side.
  5. 5Pour a spoonful of tangy chili-lime dressing over the mixture.
  6. 6Garnish with roasted peanuts and fresh green herbs.
  7. 7Serve with a large grilled rice paper cracker for scooping.
