Method
  1. 1Heat a large quantity of cooking oil in a large wok (kadai) until bubbling vigorously.
  2. 2Carefully drop pre-shaped mini dal kachori patties into the hot oil.
  3. 3Deep fry the kachoris, stirring and flipping them gently with a large perforated metal ladle.
  4. 4Continue frying until the kachoris change from a light color to a rich, golden brown, indicating crispiness.
  5. 5Scoop large batches of the cooked kachoris out of the hot oil using the perforated ladle.
  6. 6Hold the ladle briefly above the kadai to allow excess oil to drip back.
  7. 7Transfer the hot, freshly fried kachoris into a large metal colander for further draining and cooling.
