  • 1/4 to 1/2 cup finely diced green bell pepper
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon vinegar
  • 2-3 tablespoons soy sauce
  • A small handful chopped cilantro or spring onion greens
Method
  1. 1Soak little millet overnight.
  2. 2The next day, change the water and transfer the millet to a saucepan.
  3. 3Boil the millet on a gas stove for approximately 20 minutes until cooked and softened, then strain.
  4. 4Heat a non-stick wok on a portable gas stove and add cooking oil.
  5. 5Add finely chopped garlic and sauté until lightly golden.
  6. 6Add finely chopped onions and sauté until translucent.
  7. 7Add chopped spring onion greens, diced carrots, and diced red, yellow, and green bell peppers to the wok.
  8. 8Stir-fry the vegetables for a short period, maintaining their crispness.
  9. 9Sprinkle salt and black pepper over the vegetables.
  10. 10Pour a splash of vinegar and a few splashes of soy sauce into the wok, and toss everything well to combine.
  11. 11Add the boiled and strained millets to the wok.
  12. 12Thoroughly mix the millets with the sautéed vegetables and sauces using a spatula, ensuring even distribution and heating.
  13. 13Garnish the dish with fresh chopped cilantro or spring onion greens before serving.
