Ingredients
- 1/2 cup moong dal
- 1/2 cup rice
- 1/2 cup green beans
- 1 medium potato
- 1.5 tsp salt
- 1/4 tsp turmeric
- 3 tbsp clarified butter
- 3 cups water
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/8 tsp asafoetida
- 1.5 cups tomatoes
- 1 green chili
- 1/4 tsp red chili powder
- 2 tsp ginger
- 2 tbsp cilantro
- 1/4 tsp garam masala
Method
- 1Add water, washed rice, moong dal, cubed potatoes, chopped green beans, 1 tsp salt, turmeric, and 1 tbsp ghee to a pressure cooker.
- 2Close the pressure cooker and cook for about 5 minutes until done.
- 3Once steam has escaped, open the pressure cooker.
- 4In a separate pan, heat 2 tbsp ghee.
- 5Add cumin seeds, mustard seeds, and asafoetida, and let them splutter.
- 6Add finely chopped tomatoes, ginger, green chilies, red chili powder, and 1/2 tsp salt.
- 7Cook the tomatoes until very soft.
- 8Stir in cilantro and garam masala into the spice mix.
- 9Add the pressure-cooked khichdi to the spice mix.
- 10Let the khichdi simmer for about 2 minutes over low heat before serving.
