Ingredients
- 10 graham crackers
- 5 tablespoons butter
- 3 (8oz) blocks cream cheese
- 1 (14oz) can sweetened condensed milk
- 1 teaspoon agar agar
- 1 cup water
- 3 teaspoons chai masala
- 3 heaping teaspoons tea leaves
Method
- 1Grind 10 graham crackers into a fine powder.
- 2Add 5 tablespoons of melted butter to the ground graham crackers and stir until all crumbs are moist.
- 3Press the buttered graham cracker mixture firmly into the bottom of a 10-inch springform pan lined with parchment paper, creating an even crust.
- 4Place the pan with the crust in the refrigerator to chill and solidify.
- 5Heat 1 cup of water in a small saucepan and bring it to a boil.
- 6Add 1 teaspoon of powdered agar-agar to the boiling water and boil for exactly 5 minutes.
- 7Turn off the stove, then add 3 teaspoons of chai masala and 3 heaping teaspoons of tea leaves to the hot agar-agar solution and stir well to steep, keeping the mixture warm.
- 8In a large mixing bowl, combine 3 (8oz) blocks of softened cream cheese and 1 (14oz) can of sweetened condensed milk, then blend with a hand blender until smooth.
- 9Strain the warm chai-agar-agar mixture through a fine-mesh sieve directly into the cream cheese filling, pressing the tea leaves to extract all liquid.
- 10Blend the entire filling mixture again with the hand blender until uniformly light brown and smooth.
- 11Pour the prepared chai cream cheese filling evenly over the chilled graham cracker crust in the springform pan and smooth the top surface with a spatula.
- 12Cover the cheesecake tightly with aluminum foil and place it in the refrigerator to chill and set for a minimum of 8 hours, ideally overnight (24 hours for best results).
- 13After the cheesecake is fully set, unlatch and gently remove the side ring of the springform pan, then slice into wedges and serve.
