Ingredients
- Approximately 1 cup besan (chickpea flour)
- Water (added gradually)
- About 2-3 tablespoons dahi or greek yogurt
- Approximately 1 teaspoon ajwain (carom seeds)
- Around 1/2 to 1 teaspoon pink salt (himalayan salt)
- Around 1/2 to 1 teaspoon turmeric powder
- Around 1/2 to 1 teaspoon red chili powder
- Around 1/2 to 1 teaspoon cumin powder or garam masala
- Around 1/2 to 1 teaspoon dried fenugreek leaves (kasoori methi) or another dried herb
- 1/2 to 1 cup finely chopped/grated vegetables (carrots, red onion, green chilies, bell peppers)
- About 1/4 cup grated paneer (indian cottage cheese, optional)
- About 2 slices whole wheat bread
- 1-2 teaspoons ghee or oil (per slice)
- Green chutney (for serving)
Method
- 1Sift besan into a large white mixing bowl.
- 2Add water gradually to the besan and mix slowly with a spoon to form a thick, smooth batter, adding more water to achieve a pouring consistency.
- 3Incorporate 2-3 spoonfuls of dahi or Greek yogurt into the batter and mix thoroughly.
- 4Add ajwain, pink salt, turmeric powder, red chili powder, cumin powder or garam masala, and dried fenugreek leaves or another dried herb to the batter and mix until well combined and uniformly colored.
- 5Stir in the finely chopped/grated carrots, red onion, green chilies, and bell peppers into the spiced batter.
- 6Mix in the grated paneer (optional).
- 7Dip a slice of bread into the prepared besan-vegetable batter, ensuring both sides are fully coated with a generous layer.
- 8Heat a tawa (flat griddle) on a stovetop over medium heat.
- 9Apply a small amount of ghee or oil (about 1-2 teaspoons per slice) to the hot tawa.
- 10Carefully place the batter-coated bread slice onto the tawa.
- 11Cook on both sides, flipping with a spatula, until the besan coating is golden brown and crispy.
- 12Serve the finished Masala Besan Toast on a plate, cut diagonally into two triangles, accompanied by a small metal cup of green chutney.
