Ingredients
- 2 tbsp cooking oil
- 2 cups chopped okra
- 2 cups diced potatoes
- 1 cup diced tomatoes
- 1/2 tsp cumin seeds
- 1/4 tsp mustard seeds
- Pinch asafoetida powder
- 1 tsp minced ginger
- 1/2 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp salt
- 1/2 tsp red chili powder
- 1 tbsp besan
Method
- 1Heat 1 tbsp oil in a pan and stir-fry 2 cups chopped okra for about 4 minutes, then remove and set aside.
- 2Add another 1 tbsp oil to the same pan, then add 1/2 tsp cumin seeds, 1/4 tsp mustard seeds, a pinch of asafoetida, and 1 tsp minced ginger. Stir until fragrant.
- 3Add 2 cups diced potatoes, 1/2 tsp turmeric, 1 tbsp coriander, 1 tsp salt, and 1/2 tsp red chili powder. Mix well and stir-fry.
- 4Return the cooked okra to the pan.
- 5Sprinkle 1 tbsp besan over the vegetables and coat thoroughly.
- 6Add 1 cup diced tomatoes, mix well, and cook for a few more minutes until tender.
- 7Serve the Aloo Bhindi hot.
