Ingredients
- 2 cups raw almonds
- 1 tablespoon melted ghee
- 1/2 tablespoon himalayan salt
- 1/4 teaspoon citric acid
- 1 teaspoon roasted cumin powder
- 1/4 teaspoon black salt
- 1/2 teaspoon black pepper powder
- 1 teaspoon kashmiri red chilli powder
Method
- 1Preheat the oven to 350 degrees Fahrenheit.
- 2Place 2 cups of raw almonds in a white mixing bowl.
- 3Pour 1 tablespoon of melted ghee over the almonds.
- 4Toss the almonds thoroughly until each is nicely coated with ghee.
- 5Spread the ghee-coated almonds in a single layer on a baking tray lined with parchment paper.
- 6Bake the almonds in the preheated oven for 10 minutes.
- 7While the almonds are baking, combine 1/2 tablespoon Himalayan salt, 1/4 teaspoon citric acid, 1 teaspoon roasted cumin powder, 1/4 teaspoon black salt, 1/2 teaspoon black pepper powder, and 1 teaspoon Kashmiri red chilli powder in a small bowl.
- 8Transfer the spice mix to a small electric grinder and pulse to ensure they are all uniformly ground to an even consistency.
- 9After 10 minutes, remove the lightly browned and visibly oily almonds from the oven and immediately transfer them back to the white mixing bowl.
- 10While the almonds are still hot, pour the freshly ground masala mixture over them.
- 11Quickly and thoroughly toss the almonds with a spatula, ensuring that the warm ghee on the almonds helps absorb and adhere all the spice powders.
- 12Allow the Masala Almonds to cool down completely to room temperature to develop a crispy crunch.
