Ingredients
  • 1 tbsp olive oil
  • 1.5 lbs boneless, skinless chicken, cubed
  • 2 tbsp Italian seasoning
  • 0.5 tsp chili flakes
  • 3 tbsp butter
  • 3 tbsp minced garlic
  • 10 oz ruffled pasta
  • 4 cups water
  • 2.5 oz cream cheese
  • 1.5 cups milk
  • 4 cups fresh baby spinach
  • 0.5 cup sun-dried tomatoes
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh basil, chiffonade
Method
  1. 1Heat olive oil from sun-dried tomatoes jar in a Dutch oven.
  2. 2Add cubed raw chicken and season generously with Italian seasoning.
  3. 3Sauté chicken until browned and cooked through, then remove and set aside.
  4. 4To the same pot, add butter, minced garlic, and chili flakes; sauté until fragrant.
  5. 5Add dry ruffled pasta and toss to coat in the butter-garlic mixture.
  6. 6Pour water over the pasta until it is mostly submerged.
  7. 7Add cream cheese, milk, fresh spinach, drained sun-dried tomatoes, and grated Parmesan cheese to the pot.
  8. 8Stir all ingredients in the pot and cook until pasta is al dente and sauce thickens.
  9. 9Return the cooked chicken to the pot and stir to combine.
  10. 10Serve hot, topped with fresh basil and extra Parmesan cheese.
