Ingredients
- 1 tbsp olive oil
- 1.5 lbs boneless, skinless chicken, cubed
- 2 tbsp Italian seasoning
- 0.5 tsp chili flakes
- 3 tbsp butter
- 3 tbsp minced garlic
- 10 oz ruffled pasta
- 4 cups water
- 2.5 oz cream cheese
- 1.5 cups milk
- 4 cups fresh baby spinach
- 0.5 cup sun-dried tomatoes
- 0.5 cup grated Parmesan cheese
- 0.25 cup fresh basil, chiffonade
Method
- 1Heat olive oil from sun-dried tomatoes jar in a Dutch oven.
- 2Add cubed raw chicken and season generously with Italian seasoning.
- 3Sauté chicken until browned and cooked through, then remove and set aside.
- 4To the same pot, add butter, minced garlic, and chili flakes; sauté until fragrant.
- 5Add dry ruffled pasta and toss to coat in the butter-garlic mixture.
- 6Pour water over the pasta until it is mostly submerged.
- 7Add cream cheese, milk, fresh spinach, drained sun-dried tomatoes, and grated Parmesan cheese to the pot.
- 8Stir all ingredients in the pot and cook until pasta is al dente and sauce thickens.
- 9Return the cooked chicken to the pot and stir to combine.
- 10Serve hot, topped with fresh basil and extra Parmesan cheese.
