- 2-3 medium tomatoes
- 1-2 tablespoons balsamic vinegar
- 1-2 tablespoons olive oil (for marinade)
- A splash olive oil (for toasting)
- 1/4 - 1/2 teaspoon salt
- A handful fresh basil leaves
- 1 slice sourdough bread
- 2-3 tablespoons labneh
Method
- 1Chop fresh, plump tomatoes into small, bite-sized pieces on a wooden cutting board.
- 2In a blue and brown bowl, combine balsamic vinegar, olive oil, and salt, then whisk these ingredients together until well combined.
- 3Add the chopped tomatoes to the marinade and toss them thoroughly to coat, then add finely chopped fresh basil leaves and toss again.
- 4Set the marinated tomatoes aside for approximately 10 minutes to allow the flavors to meld.
- 5Heat a black cast iron skillet over medium heat and add a splash of olive oil to the skillet.
- 6Place a slice of sourdough bread in the hot skillet and toast it until golden brown and crispy on both sides, flipping with tongs as needed.
- 7Remove the toasted bread from the skillet, place it on the wooden cutting board, and cut it into two halves.
- 8Using a spoon, generously spread labneh over the crispy toast halves.
- 9Finally, spoon the marinated tomato and basil mixture over the labneh-covered toast.
