  • 2-3 medium tomatoes
  • 1-2 tablespoons balsamic vinegar
  • 1-2 tablespoons olive oil (for marinade)
  • A splash olive oil (for toasting)
  • 1/4 - 1/2 teaspoon salt

  • 1 slice sourdough bread
  • 2-3 tablespoons labneh
Method
  1. 1Chop fresh, plump tomatoes into small, bite-sized pieces on a wooden cutting board.
  2. 2In a blue and brown bowl, combine balsamic vinegar, olive oil, and salt, then whisk these ingredients together until well combined.
  3. 3Add the chopped tomatoes to the marinade and toss them thoroughly to coat, then add finely chopped fresh basil leaves and toss again.
  4. 4Set the marinated tomatoes aside for approximately 10 minutes to allow the flavors to meld.
  5. 5Heat a black cast iron skillet over medium heat and add a splash of olive oil to the skillet.
  6. 6Place a slice of sourdough bread in the hot skillet and toast it until golden brown and crispy on both sides, flipping with tongs as needed.
  7. 7Remove the toasted bread from the skillet, place it on the wooden cutting board, and cut it into two halves.
  8. 8Using a spoon, generously spread labneh over the crispy toast halves.
  9. 9Finally, spoon the marinated tomato and basil mixture over the labneh-covered toast.
