- 3 cups yogurt
- 1 cup mango puree
- About 1/3 cup fine sugar
- 1/4 teaspoon crushed cardamom
- 1/4 cup mango cut into small pieces
- 1 tablespoon sliced pistachios
Method
- 1Place a fine-mesh metal strainer over a clear glass bowl, then drape a clean white muslin or cheesecloth inside the strainer.
- 2Pour the entire quantity of plain white yogurt into the cloth.
- 3Gather the edges of the cloth and gently squeeze to release some of the whey.
- 4Place the yogurt in the cloth in a refrigerator for 3 to 4 hours to allow further draining and achieve a thick, cream-cheese-like consistency (hung yogurt).
- 5Once the hung yogurt is ready, transfer it to a mixing bowl.
- 6Add a pinch of crushed cardamom powder and mix it into the hung yogurt.
- 7Pour the bright mango pulp into the bowl with the yogurt and cardamom.
- 8Add white granulated sugar to the mixture.
- 9Thoroughly combine all ingredients using a spoon and spatula, stirring until a smooth, uniform, pale yellow consistency is achieved.
- 10Serve the Mango Shrikhand chilled in individual square glass bowls, elegantly garnished with small, fresh mango cubes.
