- 1 rice paper
- 2 tbsp curd
- 3 tbsp chopped mango
- Hot water
Method
- 1Chop the mangoes into small pieces.
- 2Place a single round rice paper onto a plate.
- 3Pour hot water over the rice paper, ensuring it is completely submerged, and gently press to ensure even soaking until it becomes soft, transparent, and stretchy.
- 4Carefully lift the translucent and flexible rice paper from the water and place it onto a working surface.
- 5Place 2 tbsp of thick, white curd in the center of the softened rice paper.
- 6Spoon 3 tbsp of chopped mango pieces over the curd.
- 7Meticulously fold the edges of the rice paper inwards over the curd and mango filling, starting with two opposite sides, then the remaining two, to create a neat parcel.
- 8Gently pat the mochi to secure its shape and ensure the filling is well-enclosed.
- 9Place the wrapped mango mochi into a refrigerator or freezer.
- 10Chill or freeze the mochi for 1 to 1.5 hours.
