- 1-2 medium tomatoes
- Half a medium red onion
- Half a medium cucumber
- 2 ripe avocados
- 1 medium ripe mango
- Generous handful fresh herbs (basil or mint)
- 1-2 tablespoons red chili sauce (sriracha or similar)
- 1/2 teaspoon salt
- 2 large flour tortillas (for 6-8 small tostada bases)
- Cooking oil (vegetable or olive oil)
- White cream or plain yogurt (for garnishing)
Method
- 1Finely dice 1-2 red tomatoes.
- 2Thinly slice half a red onion.
- 3Dice half a cucumber into small pieces.
- 4Halve, pit, scoop out flesh, slice, and dice two ripe avocados.
- 5Peel and dice one mango into small cubes.
- 6Combine diced tomatoes, red onion, cucumber, and avocado in a large mixing bowl, then add diced mango, fresh herbs, red chili sauce, and salt.
- 7Thoroughly mix all topping ingredients together until well combined.
- 8Cut smaller, round tostada bases from large flour tortillas using a circular cutter.
- 9Place tortilla circles on a baking tray and lightly brush each with cooking oil.
- 10Bake the tortilla circles in a preheated oven until golden brown and crisp to form tostada shells.
- 11Arrange baked tostada shells on a serving platter.
- 12Generously top each tostada shell with the avocado and mango mixture.
- 13Garnish each tostada with a dollop of white cream or yogurt and a small fresh herb leaf.
