Ingredients
- 1 block date paste
- 3 cups semolina
- 1 cup melted butter or ghee
- 1/2 cup sugar
- 1 tsp yeast
- 1/2 cup water
- 1 tbsp rose water
- 1 tsp mahlab
Method
- 1Scoop 1 tsp portions of date paste and roll into small balls for the cookie filling.
- 2In a large bowl, combine semolina, melted butter or ghee, sugar, and a small spoonful of mahlab or other spice.
- 3Activate yeast by dissolving 1 teaspoon in a small amount of water.
- 4Add the activated yeast mixture and a tablespoon of clear liquid (like rose water) to the semolina mixture.
- 5Knead the mixture by hand until it forms a cohesive, smooth, pale yellow dough ball.
- 6Cover the dough with plastic wrap and let it rest for a suggested period.
- 7Scoop small portions of dough (about 1 tablespoon each) and flatten them in the palm of your hand.
- 8Place a prepared date paste ball in the center of the flattened dough and enclose it, rolling it into a smooth ball.
- 9Shape the filled dough balls using wooden molds to create decorative designs on the cookies.
- 10Bake the maamoul in the oven until they are golden brown and cooked through.
