  • 1 block date paste
  • 3 cups semolina
  • 1 cup melted butter or ghee
  • 1/2 cup sugar
  • 1 tsp yeast

  • 1 tbsp rose water
  • 1 tsp mahlab
Method
  1. 1Scoop 1 tsp portions of date paste and roll into small balls for the cookie filling.

  3. 3Activate yeast by dissolving 1 teaspoon in a small amount of water.
  4. 4Add the activated yeast mixture and a tablespoon of clear liquid (like rose water) to the semolina mixture.
  5. 5Knead the mixture by hand until it forms a cohesive, smooth, pale yellow dough ball.
  6. 6Cover the dough with plastic wrap and let it rest for a suggested period.
  7. 7Scoop small portions of dough (about 1 tablespoon each) and flatten them in the palm of your hand.
  8. 8Place a prepared date paste ball in the center of the flattened dough and enclose it, rolling it into a smooth ball.
  9. 9Shape the filled dough balls using wooden molds to create decorative designs on the cookies.
  10. 10Bake the maamoul in the oven until they are golden brown and cooked through.
