- 2-3 tablespoons sesame oil
- 1 tablespoon chopped ginger
- 1/4 cup chopped onion
- 1/4 cup chopped green beans
- 1/4 cup chopped broccoli florets
- Small amount green peas
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 1/2 cup chopped mushrooms
- 1 package shirataki rice (yielding about 1-1.5 cups after rinsing)
- 1/2 teaspoon salt
- 1/2 teaspoon red chili powder or flakes
- 1/2 teaspoon garlic powder
- 1 tablespoon green chili sauce
- 1 tablespoon hot sauce (like sriracha)
- 1 tablespoon dark soy sauce
- 1/4 cup toasted, chopped or crushed peanuts
- 1/4 cup fresh chopped cilantro
- 1 sunny-side up fried egg (optional)
- Red chili flakes (for garnish)
Method
- 1Heat 2-3 tablespoons of sesame oil in a wok.
- 2Add approximately 1 tablespoon of chopped ginger and about 1/4 cup of chopped onion and stir-fry briefly.
- 3Add about 1/4 cup of chopped green beans, about 1/4 cup of chopped broccoli florets, and a small amount of green peas, then stir-fry on high heat for a couple of minutes until slightly tender-crisp.
- 4Add about 1/4 cup of diced red bell pepper, about 1/4 cup of diced yellow bell pepper, and about 1/2 cup of chopped mushrooms, then continuously stir-fry with the other vegetables.
- 5Rinse one package of Shirataki rice thoroughly with water and drain well, possibly squeezing to remove excess liquid.
- 6Sprinkle about 1/2 teaspoon of salt, about 1/2 teaspoon of red chili powder or flakes, and about 1/2 teaspoon of garlic powder over the cooked vegetables and mix thoroughly.
- 7Add the rinsed Shirataki rice to the wok and stir through to combine with the seasoned vegetables.
- 8Drizzle about 1 tablespoon of green chili sauce, about 1 tablespoon of hot sauce, and about 1 tablespoon of dark soy sauce into the wok.
- 9Toss the entire mixture vigorously to ensure all ingredients are evenly coated and heated.
- 10Add about 1/4 cup of toasted, chopped peanuts and about 1/4 cup of fresh chopped cilantro and mix into the fried rice.
- 11Serve the finished Shirataki Fried Rice hot, optionally topped with a sunny-side up fried egg and garnished with red chili flakes and fresh chopped cilantro.
