  • 2-3 tablespoons sesame oil
  • 1 tablespoon chopped ginger
  • 1/4 cup chopped onion
  • 1/4 cup chopped green beans
  • 1/4 cup chopped broccoli florets
  • Small amount green peas
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1/2 cup chopped mushrooms
  • 1 package shirataki rice (yielding about 1-1.5 cups after rinsing)
  • 1/2 teaspoon salt
  • 1/2 teaspoon red chili powder or flakes
  • 1/2 teaspoon garlic powder
  • 1 tablespoon green chili sauce
  • 1 tablespoon hot sauce (like sriracha)
  • 1 tablespoon dark soy sauce
  • 1/4 cup toasted, chopped or crushed peanuts
  • 1/4 cup fresh chopped cilantro
  • 1 sunny-side up fried egg (optional)
  • Red chili flakes (for garnish)
Method
  1. 1Heat 2-3 tablespoons of sesame oil in a wok.
  2. 2Add approximately 1 tablespoon of chopped ginger and about 1/4 cup of chopped onion and stir-fry briefly.
  3. 3Add about 1/4 cup of chopped green beans, about 1/4 cup of chopped broccoli florets, and a small amount of green peas, then stir-fry on high heat for a couple of minutes until slightly tender-crisp.
  4. 4Add about 1/4 cup of diced red bell pepper, about 1/4 cup of diced yellow bell pepper, and about 1/2 cup of chopped mushrooms, then continuously stir-fry with the other vegetables.
  5. 5Rinse one package of Shirataki rice thoroughly with water and drain well, possibly squeezing to remove excess liquid.
  6. 6Sprinkle about 1/2 teaspoon of salt, about 1/2 teaspoon of red chili powder or flakes, and about 1/2 teaspoon of garlic powder over the cooked vegetables and mix thoroughly.
  7. 7Add the rinsed Shirataki rice to the wok and stir through to combine with the seasoned vegetables.
  8. 8Drizzle about 1 tablespoon of green chili sauce, about 1 tablespoon of hot sauce, and about 1 tablespoon of dark soy sauce into the wok.
  9. 9Toss the entire mixture vigorously to ensure all ingredients are evenly coated and heated.
  10. 10Add about 1/4 cup of toasted, chopped peanuts and about 1/4 cup of fresh chopped cilantro and mix into the fried rice.
  11. 11Serve the finished Shirataki Fried Rice hot, optionally topped with a sunny-side up fried egg and garnished with red chili flakes and fresh chopped cilantro.
