Ingredients
- 8 medium potatoes

Method
- 1Peel and chop potatoes into large cubes.
- 2Boil potatoes with salt in water until tender.
- 3Drain potatoes and mash with vegan butter and nutritional yeast until creamy.
- 4Sauté diced onions, carrots, and celery in a pan.
- 5Stir in tomato paste with the sautéed vegetables.
- 6Add dry lentils, canned diced tomatoes, vegetable broth, and dried herbs to the pan.
- 7Simmer the lentil mixture until liquid is absorbed and lentils are tender.
- 8Spread the mashed potato topping over the lentil and vegetable base.
- 9Mist the top of the pie with cooking spray.
- 10Bake until golden brown and heated through.
