  • 8 medium potatoes

Method
  1. 1Peel and chop potatoes into large cubes.
  2. 2Boil potatoes with salt in water until tender.
  3. 3Drain potatoes and mash with vegan butter and nutritional yeast until creamy.
  4. 4Sauté diced onions, carrots, and celery in a pan.
  5. 5Stir in tomato paste with the sautéed vegetables.
  6. 6Add dry lentils, canned diced tomatoes, vegetable broth, and dried herbs to the pan.
  7. 7Simmer the lentil mixture until liquid is absorbed and lentils are tender.
  8. 8Spread the mashed potato topping over the lentil and vegetable base.
  9. 9Mist the top of the pie with cooking spray.
  10. 10Bake until golden brown and heated through.
