Ingredients
  • 6-8 chicken thighs
  • 1.5 cups pearl couscous
  • 1 lemon
  • 1 bunch fresh thyme
  • 4-5 cloves garlic
  • 2 cups vegetable broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1/4 cup fresh parsley, chopped
Method
  1. 1Season chicken thighs with salt, pepper, paprika, and garlic powder.
  2. 2Slice lemon, strip thyme leaves, peel and mince garlic.
  3. 3Heat cast iron skillet and sear chicken thighs until golden-brown on both sides; remove.
  4. 4Add pearl couscous, minced garlic, and thyme to skillet with chicken drippings; sauté until toasted.
  5. 5Pour in vegetable broth, then return browned chicken thighs to the skillet.
  6. 6Arrange lemon slices on and around the chicken.
  7. 7Bake in a preheated 400°F oven until cooked through and couscous is tender.
  8. 8Garnish with fresh chopped parsley and serve.
