Ingredients
- 6-8 chicken thighs
- 1.5 cups pearl couscous
- 1 lemon
- 1 bunch fresh thyme
- 4-5 cloves garlic
- 2 cups vegetable broth
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp paprika
- 1/4 cup fresh parsley, chopped
Method
- 1Season chicken thighs with salt, pepper, paprika, and garlic powder.
- 2Slice lemon, strip thyme leaves, peel and mince garlic.
- 3Heat cast iron skillet and sear chicken thighs until golden-brown on both sides; remove.
- 4Add pearl couscous, minced garlic, and thyme to skillet with chicken drippings; sauté until toasted.
- 5Pour in vegetable broth, then return browned chicken thighs to the skillet.
- 6Arrange lemon slices on and around the chicken.
- 7Bake in a preheated 400°F oven until cooked through and couscous is tender.
- 8Garnish with fresh chopped parsley and serve.
