Ingredients
  • Small amount cooking oil
  • 1/4 to 1/2 cup chopped white onions
  • 1-2 cloves minced garlic
  • 1 cup chopped kimchi
  • 1 tablespoon gochujang
  • 1.5 to 2 cups cooked white rice
  • 2 eggs
  • 1/2 cup shredded cheese
  • Sprinkle furikake or seaweed flakes
  • Small amount chopped green onions
Method
  1. 1Heat a pan with a small amount of oil.
  2. 2Sauté chopped white onions and minced garlic until fragrant.
  3. 3Add chopped kimchi and gochujang to the pan and stir briefly to combine flavors.
  4. 4Add cooked white rice to the pan, then thoroughly stir and toss until evenly coated and vibrant orange-red.
  5. 5Scoop the cooked kimchi fried rice into a bowl, press down to form a compact dome, then invert it centrally into the cleaned pan.
  6. 6Pour whisked eggs around the base of the rice dome, filling the pan to create a surrounding layer.
  7. 7Sprinkle shredded cheese generously over the raw egg and the rice mound.
  8. 8Cover the pan or adjust heat to allow the egg to set and the cheese to fully melt.
  9. 9Garnish the dish with a sprinkle of furikake or seaweed flakes and chopped green onions.
