Ingredients
  • 1 cup chana dal
  • 1/2 cup moong dal
  • 2 medium potatoes
  • 1 inch ginger
  • 2-3 green chilies
  • 1/4 cup chopped cilantro
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1/4 tsp asafoetida
  • 1/2 tsp black pepper
  • 2-3 cups cooking oil for deep frying
Method
  1. 1Soak chana dal and moong dal for at least 4 hours.
  2. 2Grind soaked chana dal and moong dal into a coarse paste using a food processor.
  3. 3Transfer the dal mixture to a bowl and add mashed potatoes, chopped ginger, green chilies, cilantro, coriander powder, salt, asafoetida, and black pepper.
  4. 4Mix ingredients thoroughly by hand until well combined, then shape into 7-8 flattened patties.
  5. 5Heat cooking oil in a deep frying pan until it is moderately hot.
  6. 6Carefully place the formed patties into the hot oil and deep-fry until they turn golden brown. Remove and drain.
  7. 7Allow the first-fried patties to cool for about 8 minutes.
  8. 8Slice each cooled patty in half lengthwise using a knife.
  9. 9Return the sliced patties to the hot oil for a second deep fry until they achieve a deeper golden-brown color and a crispy texture.
  10. 10Remove from oil, drain excess oil, and serve.
