- 1 egg yolk
- 1 tbsp caster sugar

Method
- 1Combine 1 egg yolk, 1 tbsp caster sugar, 3 tbsp milk, and 1/4 cup cream in a saucepan and whisk thoroughly.
- 2Cook the mixture on low heat, stirring constantly, until it thickens into a pale yellow custard.
- 3Pour the thickened custard into a bowl and cover.
- 4Pour 1/4 cup whipping cream into a bowl and beat with an electric mixer until it starts to stiffen.
- 5Add 1 tbsp icing sugar and continue mixing until the cream forms stiff peaks.
- 6Heat oil for deep frying in a saucepan.
- 7Deep-fry 2-3 slices thick bread in the hot oil until uniformly golden-brown and crispy, then remove and drain on a wire rack.
- 8Make a deep cut along one side of a fried bread slice to create a pocket and generously fill it with whipped cream.
- 9Cut a pocket into another fried bread slice and fill with the chilled custard.
- 10Dip the custard-filled side of the bread into granulated white sugar to coat the surface.
- 11Use a culinary torch to caramelize the sugar on the custard, creating a glossy amber layer.
- 12Spoon an additional dollop of custard on top of the caramelized layer.
