- 1 head romaine lettuce
- 1 pint cherry tomatoes
- 2 small cucumbers
- 1/2 small red onion
- 1 can chickpeas
- 4 oz provolone cheese
- 1/2 cup pitted green olives
- 1 can artichoke hearts
- 1/4 cup sliced pepperoncini
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp Dijon mustard
- 2 cloves grated garlic
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Method
- 1Halve, core, and chop romaine lettuce into small pieces, then wash and set aside.
- 2Halve cherry tomatoes efficiently.
- 3Dice cucumbers and finely dice red onion.
- 4Slice provolone cheese into strips and cube.
- 5In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, grated garlic, dried oregano, salt, and black pepper for the dressing.
- 6Add romaine lettuce, chickpeas, tomatoes, cucumbers, green olives, artichoke hearts, pepperoncini, provolone, red onion, Parmesan, and parsley to the bowl with the dressing.
- 7Toss all ingredients thoroughly until every piece is coated with dressing and serve.
