Ingredients
  • 1/2 to 3/4 cup white granulated sugar
  • 1/2 cup cocoa powder
  • 1 tablespoon dark, brewed filter coffee or coffee concentrate
  • 1.5 cups water
  • 1/4 cup chopped dark chocolate
  • Ice cubes
  • Cold milk
Method
  1. 1Place an empty stainless steel pan on a wooden cutting board, then add granulated sugar, the first portion of cocoa powder, and one tablespoon of brewed coffee.
  2. 2Add more cocoa powder, then pour about 1 cup of water over the ingredients.
  3. 3Whisk the mixture thoroughly to combine all ingredients and ensure there are no lumps.
  4. 4Add another 1/2 cup of water and continue whisking until the mixture is smooth.
  5. 5Place the pan on a heat source and add chopped dark chocolate to the mixture.
  6. 6Stir and cook the mixture until it comes to a boil and the chocolate has completely melted, creating a smooth, medium-thick, dark brown syrup.
  7. 7Transfer the hot mocha base to a clear measuring jug and allow it to cool down.
  8. 8Once cooled, store the mocha base in a bottle or container in the fridge for future use.
  9. 9To serve, fill a glass with ice cubes.
  10. 10Pour a portion of the pre-made mocha base over the ice, filling about one-third of the glass.
  11. 11Pour cold milk into the glass, filling it to the top.
  12. 12Stir the drink well with a metal straw to combine the layers and enjoy.
