Ingredients
  • 2 packages udon noodles
  • 3/4 cup dark soy sauce
  • 3/4 cup honey
  • 1/4 cup rice vinegar or water
  • 1.5 tbsp chili paste
  • 5 cloves garlic, sliced
  • 1.25 lbs chicken thighs, cubed
  • 2 red bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup sugar snap peas
  • 1 cup shelled edamame
  • Black pepper to taste
  • Fresh cilantro for garnish
  • Toasted sesame seeds for garnish
  • Green onions for garnish
Method
  1. 1Boil udon noodles, then drain and rinse with cold water.
  2. 2Whisk together soy sauce, honey, vinegar/water, chili paste, and sliced garlic for the sauce.
  3. 3Sauté cubed chicken in a wok or large pan until partially cooked, seasoning with black pepper.
  4. 4Add red bell peppers, broccoli, sugar snap peas, and edamame to the pan and stir-fry with the chicken.
  5. 5Add the cooked udon noodles to the pan.
  6. 6Pour the prepared honey garlic sauce over the noodles and vegetables.
  7. 7Stir vigorously to coat all ingredients and cook until heated through.
  8. 8Stir in fresh cilantro and pickled ginger.
  9. 9Garnish with sesame seeds, green onions, mint, and chili flakes before serving.
