Ingredients
- 2 packages udon noodles
- 3/4 cup dark soy sauce
- 3/4 cup honey
- 1/4 cup rice vinegar or water
- 1.5 tbsp chili paste
- 5 cloves garlic, sliced
- 1.25 lbs chicken thighs, cubed
- 2 red bell peppers, sliced
- 1 cup broccoli florets
- 1 cup sugar snap peas
- 1 cup shelled edamame
- Black pepper to taste
- Fresh cilantro for garnish
- Toasted sesame seeds for garnish
- Green onions for garnish
Method
- 1Boil udon noodles, then drain and rinse with cold water.
- 2Whisk together soy sauce, honey, vinegar/water, chili paste, and sliced garlic for the sauce.
- 3Sauté cubed chicken in a wok or large pan until partially cooked, seasoning with black pepper.
- 4Add red bell peppers, broccoli, sugar snap peas, and edamame to the pan and stir-fry with the chicken.
- 5Add the cooked udon noodles to the pan.
- 6Pour the prepared honey garlic sauce over the noodles and vegetables.
- 7Stir vigorously to coat all ingredients and cook until heated through.
- 8Stir in fresh cilantro and pickled ginger.
- 9Garnish with sesame seeds, green onions, mint, and chili flakes before serving.
