- 1/2 to 3/4 cup chopped red onions or shallots
- 2-3 tablespoons chopped galangal or ginger
- 1/2 cup finely chopped lemongrass
- Kaffir lime leaves
- Cilantro roots and stems
- Handful dried red chilies
- 1-2 tablespoons oil
- 1-2 tablespoons vegan fish sauce alternative or soy sauce
- 1-2 tablespoons oil or water
- 1 tablespoon vegan shrimp paste alternative or concentrated chili paste
Method
- 1Add chopped red onions or shallots, galangal or ginger, lemongrass, kaffir lime leaves, cilantro roots and stems, and dried red chilies into a glass blender jar.
- 2Pour light brown liquid (oil), darker reddish-brown liquid (vegan fish sauce alternative or soy sauce), yellowish liquid (oil or water), and thick dark red-brown paste (vegan shrimp paste alternative or concentrated chili paste) into the blender with the solid ingredients.
- 3Securely place the lid on the blender.
- 4Blend the ingredients until they form a smooth, thick, and consistent paste.
