Ingredients
  • 1/2 to 3/4 cup chopped red onions or shallots
  • 2-3 tablespoons chopped galangal or ginger
  • 1/2 cup finely chopped lemongrass
  • Kaffir lime leaves
  • Cilantro roots and stems
  • Handful dried red chilies
  • 1-2 tablespoons oil
  • 1-2 tablespoons vegan fish sauce alternative or soy sauce
  • 1-2 tablespoons oil or water
  • 1 tablespoon vegan shrimp paste alternative or concentrated chili paste
Method
  1. 1Add chopped red onions or shallots, galangal or ginger, lemongrass, kaffir lime leaves, cilantro roots and stems, and dried red chilies into a glass blender jar.
  2. 2Pour light brown liquid (oil), darker reddish-brown liquid (vegan fish sauce alternative or soy sauce), yellowish liquid (oil or water), and thick dark red-brown paste (vegan shrimp paste alternative or concentrated chili paste) into the blender with the solid ingredients.
  3. 3Securely place the lid on the blender.
  4. 4Blend the ingredients until they form a smooth, thick, and consistent paste.
