  • Water from 1 tender coconut (around 1 + 1/3 cup)
  • 1 tsp agar agar powder
  • 1 cup chopped mangoes
  • 1/4 cup to 1/3 cup sugar
  • Squeeze of lemon
  • Cold water as needed
  • Ice cubes
  • Chopped mangoes for assembly
Method
  1. 1Open the tender coconut with a knife and pour its water into a black non-stick pan.
  2. 2Place the pan on a portable gas stove over medium heat and add about 1 teaspoon of agar-agar powder to the coconut water.
  3. 3Stir the mixture continuously and boil for about a minute until the agar-agar fully dissolves.
  4. 4Pour the hot liquid into a square glass container and set aside to cool and solidify completely into a translucent jelly.
  5. 5Add chopped mango pieces to the same pan on the gas stove and sprinkle with 1/4 to 1/3 cup of granulated sugar.
  6. 6Cook the mango mixture for about 7-8 minutes, stirring, until mangoes soften and sugar melts to form a thick compote.
  7. 7Add a squeeze of fresh lemon juice towards the end and mix it into the mango compote.
  8. 8Let the mango mixture cool completely, then transfer it into a blender jar with a small amount of cold water and blend until smooth.
  9. 9Add additional cold water to the mango puree to achieve the desired drink consistency.
  10. 10To assemble, add a generous amount of ice cubes to a tall, clear glass.
  11. 11Cut the fully set coconut jelly into small, uniform squares within its container using a knife.
  12. 12Spoon the translucent white jelly cubes into the glass, layering them over the ice.
  13. 13Add a few pieces of fresh chopped mango on top of the jelly.
  14. 14Pour the smooth mango juice into the glass, filling it up and mixing with the layers below.
