Ingredients
  • 1.5 teaspoons dry yeast
  • 1 teaspoon brown sugar
  • Approximately 1/2 cup lukewarm milk
  • 2 cups all-purpose flour (maida)
  • Salt to taste
  • Warm water as needed
  • 3 teaspoons softened butter (for dough)
  • Melted butter (for brushing buns)
  • Softened butter (for greasing tray and final bun maska spread)
Method
  1. 1Combine lukewarm milk, dry yeast, and brown sugar in a glass cup and let it sit for 5-10 minutes until foamy.
  2. 2In a large bowl, make a well in the center of the all-purpose flour (maida), then add the activated yeast mixture, a pinch of salt, and 1.5 teaspoons of softened butter.
  3. 3Mix the ingredients by hand, gradually incorporating the flour, and add warm water little by little as needed to form a dough.
  4. 4Knead the dough vigorously for about 6-7 minutes, incorporating another 1.5 teaspoons of softened butter until the dough is smooth, elastic, and pliable.
  5. 5Form the kneaded dough into a smooth ball, place it in a lightly greased clear glass bowl, cover with a wet cloth, and let it proof in a warm place for 45 minutes until risen.
  6. 6Gently remove the dough from the bowl, place it on a maida-dusted countertop, stretch and roll it into a cylindrical log, and divide it into 6 equal portions using a knife.
  7. 7Roll each portion into a smooth, round bun shape by hand.
  8. 8Grease a rectangular metal baking tray thoroughly with butter, then arrange the shaped raw buns neatly inside.
  9. 9Brush the tops of the shaped buns with melted butter, cover the tray with a wet cloth, and let them proof for a second time for 30 minutes.
  10. 10Preheat the oven to 170°C.
  11. 11Place the tray of proofed buns into the preheated oven and bake for 20-25 minutes until golden brown.
  12. 12Remove the hot tray from the oven, immediately cover the buns with a wet cloth, and let them cool for 10-15 minutes to ensure they remain soft.
  13. 13For "Bun Maska," slice a cooled bun horizontally almost entirely through, and generously spread softened butter on the cut surfaces.
