  • 50 gm paneer
  • 8-10 soaked cashews
  • 1/4 to 1/3 cup grated cheese
  • 3-4 large garlic cloves
  • 1-2 teaspoons olive oil
  • 1/2 to 1 teaspoon italian seasoning
  • Salt to taste
  • 1 teaspoon lemon juice or vinegar
  • 1-2 tablespoons water (add more if required)
  • 1 teaspoon chili flakes
  • 1 tablespoon kashmiri red chili powder
  • 3 soaked kashmiri red chili (optional, for authentic chipotle flavor)
Method
  1. 1Add crumbled paneer, grated cheese, soaked cashews, and whole garlic cloves to a blender jar.
  2. 2Drizzle in olive oil, sprinkle Italian seasoning, and add salt.
  3. 3Add lemon juice or vinegar and water to the blender.
  4. 4Blend all ingredients until a smooth, thick, off-white paste is formed.
  5. 5Add chili flakes, kashmiri red chili powder, and optionally the soaked kashmiri red chili to the blended mixture.
  6. 6Blend again until the chilies are fully incorporated, creating a creamy light orange sauce.
