Ingredients
- 250g chicken breast
- Salt to taste
- Black pepper to taste
- 2 sprays of extra virgin olive oil
- 1 tbsp garlic powder
- 3 tbsp pizza sauce of choice
- 10-15g parmesan cheese
- Parmesan cheese for garnish
- Fresh basil leaves for garnish
- Red chilli flakes for garnish
- Dried oregano for garnish
Method
- 1Line a baking tray with parchment paper.
- 2Place chicken breasts on the parchment paper, cover with plastic wrap, and pound them flat to an even thickness using a meat mallet.
- 3Remove the plastic wrap and season the flattened chicken generously on both sides with salt, black pepper, and garlic powder.
- 4Preheat the oven to 210c.
- 5Bake the seasoned chicken in the preheated oven for 15 minutes.
- 6Remove the tray from the oven and spread pizza sauce over the surface of each cooked chicken breast.
- 7Grate parmesan cheese generously over the sauce-covered chicken.
- 8Return the tray to the oven and bake for 5 more minutes to melt the cheese and warm the sauce.
- 9Transfer the chicken parmigiana to a serving plate.
- 10Garnish with additional grated parmesan cheese, freshly chopped basil, red chilli flakes, and dried oregano.
