Ingredients
  • 250g chicken breast
  • Salt to taste
  • Black pepper to taste
  • 2 sprays of extra virgin olive oil
  • 1 tbsp garlic powder
  • 3 tbsp pizza sauce of choice
  • 10-15g parmesan cheese
  • Parmesan cheese for garnish
  • Fresh basil leaves for garnish
  • Red chilli flakes for garnish
  • Dried oregano for garnish
Method
  1. 1Line a baking tray with parchment paper.
  2. 2Place chicken breasts on the parchment paper, cover with plastic wrap, and pound them flat to an even thickness using a meat mallet.
  3. 3Remove the plastic wrap and season the flattened chicken generously on both sides with salt, black pepper, and garlic powder.
  4. 4Preheat the oven to 210c.
  5. 5Bake the seasoned chicken in the preheated oven for 15 minutes.
  6. 6Remove the tray from the oven and spread pizza sauce over the surface of each cooked chicken breast.
  7. 7Grate parmesan cheese generously over the sauce-covered chicken.
  8. 8Return the tray to the oven and bake for 5 more minutes to melt the cheese and warm the sauce.
  9. 9Transfer the chicken parmigiana to a serving plate.
  10. 10Garnish with additional grated parmesan cheese, freshly chopped basil, red chilli flakes, and dried oregano.
