  • 200 g chicken mince
  • 1/2 tsp garlic powder or 1 tsp garlic paste
  • 1/2 tsp chili flakes
  • 1/2 tsp oregano
  • Salt to taste
  • Pepper to taste
  • 3 boiled egg whites
  • 1/2 cheese slice (~10 g)
  • 2-3 tbsp skim milk
  • 1/2 tsp honey
  • 1/2 tsp vinegar
  • 1/2 tsp olive oil (optional)
  • Oil spray (for cooking chicken base)
  • 1/4 cup diced onion
  • 80 g grilled chicken cubes
  • 2 tbsp chopped coriander
  • Chilli flakes for garnish
  • Oregano for garnish
  • 20 g grated cheese
Method
  1. 1Combine chicken mince with garlic powder or paste, chili flakes, oregano, salt, and pepper in a bowl, mixing thoroughly.
  2. 2In a blender, combine boiled egg whites, garlic cloves, processed cheese slice, honey, olive oil (optional), black pepper, salt, vinegar, and skim milk, then blend until a smooth, thick, creamy sauce forms.
  3. 3Place a non-stick griddle on a stove, spray with oil, then place a spoonful of seasoned chicken mince mixture and flatten it into a thin, circular disc.
  4. 4Cook the chicken base for a few minutes until golden brown on one side, then flip it.
  5. 5Cover the griddle with a lid and cook the chicken base for another couple of minutes until cooked through.
  6. 6Remove the lid and spread a generous spoonful of the Alfredo sauce over the cooked chicken base.
  7. 7Top the pizza with grilled chicken cubes, sliced red onions, grated cheese, chopped coriander, chili flakes, and Italian seasoning.
  8. 8Cover the griddle again with the lid and cook for approximately one minute until the cheese has fully melted.
  9. 9Carefully remove the completed mini pizza from the griddle and transfer to a plate.
