- 1Combine 1 cup makhana, 8-10 pitted dates, 6-8 whole cashew nuts, 8-10 whole almonds, and a small handful of whole pistachios in a bowl.
- 2Pour 250ml warm milk over the dry ingredients in the bowl.
- 3Add a small pinch of saffron strands to the mixture.
- 4Gently stir the mixture with a spoon and leave to soak for 20 minutes to soften the ingredients.
- 5Transfer the softened ingredients and saffron-infused milk into a blender jar.
- 6Add approximately 1 large tablespoon of honey to the blender jar.
- 7Blend the ingredients until a thick, smooth, yet slightly coarse consistency is achieved, avoiding a completely fine paste.
- 8Carefully pour the creamy mixture into four small, unglazed clay pots (matkas), filling each almost to the brim.
- 9Generously top each pot with finely slivered almonds and chopped green pistachios.
- 10Cover the filled and garnished pots with their individual lids.
- 11Place the pots on a metal tray and freeze for 6-8 hours to set completely.
- 12Serve the finished ice cream directly from the small clay pots, garnished with almonds and pistachios.
