Method
  1. 1Combine 1 cup makhana, 8-10 pitted dates, 6-8 whole cashew nuts, 8-10 whole almonds, and a small handful of whole pistachios in a bowl.
  2. 2Pour 250ml warm milk over the dry ingredients in the bowl.
  3. 3Add a small pinch of saffron strands to the mixture.
  4. 4Gently stir the mixture with a spoon and leave to soak for 20 minutes to soften the ingredients.
  5. 5Transfer the softened ingredients and saffron-infused milk into a blender jar.
  6. 6Add approximately 1 large tablespoon of honey to the blender jar.
  7. 7Blend the ingredients until a thick, smooth, yet slightly coarse consistency is achieved, avoiding a completely fine paste.
  8. 8Carefully pour the creamy mixture into four small, unglazed clay pots (matkas), filling each almost to the brim.
  9. 9Generously top each pot with finely slivered almonds and chopped green pistachios.
  10. 10Cover the filled and garnished pots with their individual lids.
  11. 11Place the pots on a metal tray and freeze for 6-8 hours to set completely.
  12. 12Serve the finished ice cream directly from the small clay pots, garnished with almonds and pistachios.
