  • 1.5 cups mixed nuts & seeds
  • 2 tsp cocoa powder
  • 1/4 cup peanut or almond butter
  • 1 cup soft pitted dates
  • 1 tsp vanilla essence
  • 100g dark chocolate
  • 1 tsp butter
  • Chopped pistachios
  • A pinch of crushed dried rose petals
Method
  1. 1Combine 1.5 cups mixed nuts & seeds, 2 tsp cocoa powder, 1/4 cup peanut or almond butter, 1 cup soft pitted dates, and 1 tsp vanilla essence in a blender or food processor.
  2. 2Blend the mixture until it forms a cohesive, dark brown, crumbly mass that can be easily pressed together.
  3. 3Melt 100g dark chocolate with 1 tsp butter in a microwave or separate bowl until smooth and glossy.
  4. 4Take small portions of the blended brownie mixture and firmly press them into the heart-shaped indentations of a silicone mold.
  5. 5Spoon the melted dark chocolate over each brownie base in the mold, completely covering them.
  6. 6While the chocolate topping is still wet, generously sprinkle chopped pistachios and a pinch of crushed dried rose petals over each brownie bite.
  7. 7Freeze the mold for 10 minutes to allow the chocolate to firm up.
  8. 8Carefully push out the set brownie bites from the flexible silicone mold.
  9. 9Enjoy the brownie bites and store any remaining in the fridge for 3-4 weeks.
