Ingredients
  • 2 skinless, bone-in chicken leg quarters
  • 1/2 cup thick white yogurt
  • 1 tbsp ginger garlic paste
  • 1 tbsp lime juice
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 small red onion
  • 1/2 small red tomato
  • 2 whole green chillies
  • A handful of fresh coriander leaves
  • A handful of fresh mint leaves
  • 1 tbsp Kashmiri chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp fennel powder
  • 1 tsp chicken masala
  • 1/4 tsp turmeric
  • 1 tsp olive oil
  • Additional sprinkle of black pepper
  • Olive oil (for brushing grill pan)
  • 6 garlic cloves
  • 3 tbsp hung curd / Greek yogurt
  • 1 tbsp lemon juice
  • Pinch salt
  • A drizzle of honey
  • A sprinkle of red chili powder or chili flakes (for garnish)
  • Sliced red onion rings (for garnish)
  • Fresh mint leaves (for garnish)
  • Lime wedges (for garnish)
Method
  1. 1Make deep cuts in the chicken and coat with the first marinade of yogurt, ginger-garlic paste, lime juice, salt, and black pepper.
  2. 2Rest the chicken with the first marinade for 30 minutes.
  3. 3Blend chopped red onion, chopped tomato, green chillies, mint leaves, and coriander leaves into a smooth paste.
  4. 4Mix the blended paste with Kashmiri chilli powder, cumin powder, coriander powder, garam masala, fennel powder, chicken masala, turmeric, salt, olive oil, and an additional sprinkle of black pepper to form the second marinade.
  5. 5Coat the chicken thoroughly with the second marinade.
  6. 6Marinate the chicken for 2-4 hours or overnight.
  7. 7Heat a cast iron grill pan on medium heat for 4 minutes and brush lightly with olive oil.
  8. 8Place the marinated chicken onto the hot grill pan and grill for 6-7 minutes per side to develop char marks.
  9. 9Lower the heat, cover loosely, and cook for another 10-12 minutes until the chicken is cooked through.
  10. 10Combine minced garlic paste, thick yogurt, olive oil, lemon juice, honey, and salt; mix until a smooth, creamy white sauce is formed.
  11. 11Serve the grilled chicken with the garlic sauce, garnished with sliced red onion rings, fresh mint leaves, and lime wedges.
