Ingredients
- Several small whole lettuce hearts, split lengthwise
- About 1/2 cup julienned cucumber
- About 1/2 cup mixed chopped bell peppers
- Approximately 1/2 cup halved cherry tomatoes
- About 1/2 cup shredded carrots
- About 1/2 cup thinly sliced radishes
- 1-2 sliced avocados
- Several slices or cubes halloumi cheese
- Dark liquid dressing
- Chopped nuts or seeds (optional)
Method
- 1Pan-fry halloumi cheese slices or cubes until golden brown on all sides.
- 2Arrange several split lettuce hearts neatly on a large serving platter.
- 3Spread julienned cucumber over the lettuce base.
- 4Layer mixed chopped red, green, and possibly yellow/orange bell peppers on top of the cucumber.
- 5Add halved cherry tomatoes over the bell peppers.
- 6Sprinkle shredded or finely julienned carrots over the bed of vegetables.
- 7Place thinly sliced radishes around the perimeter or distribute them over the salad.
- 8Add sliced avocado pieces, nestling them among the other vegetables.
- 9Optionally, add chopped nuts or seeds underneath where the halloumi and avocado will sit.
- 10Place the pre-cooked, golden-brown halloumi cheese slices or cubes on top of the salad.
- 11Pour a dark liquid dressing generously over the entire salad.
