Ingredients

  • A small bowl of walnuts

  • About 1-2 cloves minced garlic
  • About 1-2 tablespoons Dijon mustard
  • About ¼ cup balsamic vinegar
  • About 1-2 tablespoons honey
  • About ½ cup extra virgin olive oil
  • Olive oil (for frying)

Method
  1. 1Carefully separate and arrange cos lettuce leaves on a large white rectangular serving platter.
  2. 2Peel and julienne carrots, slice baby cucumbers, halve cherry tomatoes, thinly slice three colors of bell peppers into strips, and halve, pit, peel, and dice avocados.
  3. 3Thinly slice radishes, and thinly slice a red onion into rings and place it in a bowl of water.
  4. 4Strip fresh thyme leaves from their stems and finely chop them, then finely chop walnuts and dried figs.
  5. 5Heat a non-stick pan on the stove with a generous amount of olive oil, then carefully place cubed halloumi cheese into the hot oil and fry until each side turns golden brown and slightly crispy.
  6. 6Remove the pan-fried halloumi cubes and set them aside on a separate plate.
  7. 7Mince garlic and add it to a mixing bowl with Dijon mustard, balsamic vinegar, honey, salt, black pepper, and extra virgin olive oil.
  8. 8Thoroughly whisk all dressing ingredients together until well combined.
  9. 9Artfully layer the prepared sliced cucumbers, colorful bell peppers, cherry tomatoes, julienned carrots, sliced radishes, and sliced red onion onto the bed of lettuce on the platter.
  10. 10Add the diced avocado, followed by a sprinkling of the chopped walnuts and dried figs, and sprinkle the chopped thyme over the salad.
  11. 11Carefully arrange the golden-brown halloumi cubes on top of the colorful vegetable base.
  12. 12Generously drizzle the homemade balsamic dressing over the entire salad.
  13. 13Place a few fresh basil leaves as a final garnish.
