Ingredients
- Several leaves cos lettuce
- About 2 carrots
- About 5-6 baby cucumbers

- About 5-6 radishes
- 1 red onion
- 2 avocados
- About 1 block of halloumi cheese
- A small bowl of walnuts
- A small bowl of dried figs
- Fresh thyme
- Fresh basil
- About 1-2 cloves minced garlic
- About 1-2 tablespoons Dijon mustard
- About ¼ cup balsamic vinegar
- About 1-2 tablespoons honey
- About ½ cup extra virgin olive oil
- Olive oil (for frying)
- Salt
- Black pepper
Method
- 1Carefully separate and arrange cos lettuce leaves on a large white rectangular serving platter.
- 2Peel and julienne carrots, slice baby cucumbers, halve cherry tomatoes, thinly slice three colors of bell peppers into strips, and halve, pit, peel, and dice avocados.
- 3Thinly slice radishes, and thinly slice a red onion into rings and place it in a bowl of water.
- 4Strip fresh thyme leaves from their stems and finely chop them, then finely chop walnuts and dried figs.
- 5Heat a non-stick pan on the stove with a generous amount of olive oil, then carefully place cubed halloumi cheese into the hot oil and fry until each side turns golden brown and slightly crispy.
- 6Remove the pan-fried halloumi cubes and set them aside on a separate plate.
- 7Mince garlic and add it to a mixing bowl with Dijon mustard, balsamic vinegar, honey, salt, black pepper, and extra virgin olive oil.
- 8Thoroughly whisk all dressing ingredients together until well combined.
- 9Artfully layer the prepared sliced cucumbers, colorful bell peppers, cherry tomatoes, julienned carrots, sliced radishes, and sliced red onion onto the bed of lettuce on the platter.
- 10Add the diced avocado, followed by a sprinkling of the chopped walnuts and dried figs, and sprinkle the chopped thyme over the salad.
- 11Carefully arrange the golden-brown halloumi cubes on top of the colorful vegetable base.
- 12Generously drizzle the homemade balsamic dressing over the entire salad.
- 13Place a few fresh basil leaves as a final garnish.
