  • 1 red tilapia fish
  • 1 small turmeric root
  • 1 tsp minced lemongrass

  • 1 tbsp oyster sauce
  • 2 tbsp cooking oil
  • 1 tsp pepper
  • 1 tbsp sugar
  • 1 tsp fish sauce
  • Fresh green lettuce
  • Purple perilla leaves
  • White vermicelli noodles

Method
  1. 1Pound turmeric root, red chili, garlic cloves, and minced lemongrass together in a mortar to form a coarse paste.
  2. 2Transfer the paste to a bowl, add cooking oil, granulated sugar, oyster sauce, and ground black pepper. Mix thoroughly to create a thick marinade.
  3. 3Place the cleaned red tilapia fish on a cutting board and score it diagonally several times on both sides.
  4. 4Generously rub the marinade paste over the entire fish, ensuring it penetrates into the scored slits.
  5. 5Grill the marinated fish until it is cooked through and has a nicely charred exterior.
  6. 6Serve the grilled fish with fresh green lettuce, purple perilla leaves, white vermicelli noodles, and a bowl of dipping sauce.
