- 1 small turmeric root

Method
- 1Pound turmeric root, red chili, garlic cloves, and minced lemongrass together in a mortar to form a coarse paste.
- 2Transfer the paste to a bowl, add cooking oil, granulated sugar, oyster sauce, and ground black pepper. Mix thoroughly to create a thick marinade.
- 3Place the cleaned red tilapia fish on a cutting board and score it diagonally several times on both sides.
- 4Generously rub the marinade paste over the entire fish, ensuring it penetrates into the scored slits.
- 5Grill the marinated fish until it is cooked through and has a nicely charred exterior.
- 6Serve the grilled fish with fresh green lettuce, purple perilla leaves, white vermicelli noodles, and a bowl of dipping sauce.
