- 400g clams
- 1 large ripe mango
- 1 tbsp sugar
- 0.5 tbsp fish sauce
- 0.5 tsp stock powder
- Fresh chili slices
- Cilantro stems
Method
- 1Soak 400g clams in water with sliced red chilies for 30 minutes to clean them.
- 2Score one half of the mango and scoop its flesh into a tall blending cup.
- 3Add 1 tablespoon of sugar, 1/2 tablespoon of fish sauce, and 1/2 teaspoon of stock powder to the mango in the cup.
- 4Blend the mixture with an immersion blender until it forms a smooth, thick puree.
- 5Transfer the puree to a small pan and bring it to a boil over a stove, stirring occasionally.
- 6Score and dice the remaining half of the mango into small cubes, then add them to the simmering mango sauce and stir in.
- 7Place the cleaned clams on a grill rack over an open flame.
- 8Allow the clams to heat until their shells open.
- 9Once the clams are open, spoon a spoonful of the warm, chunky mango sauce into each clam shell.
- 10Grill the clams for an additional 2 minutes, allowing the sauce to heat through and meld with the clam flavors.
- 11Garnish each grilled clam with a small, fresh green cilantro stem before serving.
