  • 400g clams
  • 1 large ripe mango
  • 1 tbsp sugar
  • 0.5 tbsp fish sauce
  • 0.5 tsp stock powder
  • Fresh chili slices
  • Cilantro stems
Method
  1. 1Soak 400g clams in water with sliced red chilies for 30 minutes to clean them.
  2. 2Score one half of the mango and scoop its flesh into a tall blending cup.
  3. 3Add 1 tablespoon of sugar, 1/2 tablespoon of fish sauce, and 1/2 teaspoon of stock powder to the mango in the cup.
  4. 4Blend the mixture with an immersion blender until it forms a smooth, thick puree.
  5. 5Transfer the puree to a small pan and bring it to a boil over a stove, stirring occasionally.
  6. 6Score and dice the remaining half of the mango into small cubes, then add them to the simmering mango sauce and stir in.
  7. 7Place the cleaned clams on a grill rack over an open flame.
  8. 8Allow the clams to heat until their shells open.
  9. 9Once the clams are open, spoon a spoonful of the warm, chunky mango sauce into each clam shell.
  10. 10Grill the clams for an additional 2 minutes, allowing the sauce to heat through and meld with the clam flavors.
  11. 11Garnish each grilled clam with a small, fresh green cilantro stem before serving.
