Ingredients
- 3 cups shredded cooked chicken
- 250g thin flat rice noodles
- 4 cups chopped green onion
- 1/4 cup roughly chopped peeled ginger
- 2 garlic cloves
- 2 tbsp rice vinegar
- 1 tbsp water
- 2 1/2 tbsp light soy sauce
- 1/3 cup grapeseed oil
- 1 1/4 tsp cooking salt
- Crispy fried shallots (for garnish)
- Sriracha (for garnish)
Method
- 1Peel and finely dice fresh ginger.
- 2Trim and chop green onions into small pieces.
- 3Peel two garlic cloves.
- 4Combine a portion of chopped green onions, diced ginger, garlic, rice vinegar, and water in an immersion blender cup.
- 5Blitz ingredients with an immersion blender until a coarse green paste forms.
- 6Add more chopped green onion, light soy sauce, and neutral oil to the sauce mixture and blend again.
- 7Stir in cooking salt and pepper (optional) into the sauce until combined.
- 8Allow the sauce to infuse flavors for approximately 10 minutes.
- 9Place dry rice noodles in a bowl and pour boiling water over them to prepare according to package instructions.
- 10Drain and rinse cooked rice noodles briefly under tap water.
- 11Combine cooked rice noodles, shredded cooked chicken, and the prepared green ginger sauce in a large bowl.
- 12Garnish generously with Sriracha and crispy fried shallots before serving.
