Method
  1. 1Slice tomato thickly and bread by coating in flour, then egg wash, then panko breadcrumbs.
  2. 2Deep-fry breaded tomato slices until golden and crispy.
  3. 3Slice and pan-fry thick-cut bacon until crispy, seasoning with a spice blend.
  4. 4Prepare garlic-anchovy paste by mashing minced garlic with salt and an anchovy fillet.
  5. 5Make homemade mayonnaise: combine egg yolks, garlic-anchovy paste, and lemon juice in a jar, then slowly blend in oil with an immersion blender.
  6. 6Stir grated Parmesan cheese into the homemade mayonnaise.
  7. 7Toast sourdough bread and shred iceberg lettuce.
  8. 8Assemble the sandwich with toasted sourdough, fried bacon, deep-fried tomatoes, shredded lettuce, and homemade garlic-anchovy-Parmesan mayonnaise.
