Ingredients
- 1 large heirloom tomato

Method
- 1Slice tomato thickly and bread by coating in flour, then egg wash, then panko breadcrumbs.
- 2Deep-fry breaded tomato slices until golden and crispy.
- 3Slice and pan-fry thick-cut bacon until crispy, seasoning with a spice blend.
- 4Prepare garlic-anchovy paste by mashing minced garlic with salt and an anchovy fillet.
- 5Make homemade mayonnaise: combine egg yolks, garlic-anchovy paste, and lemon juice in a jar, then slowly blend in oil with an immersion blender.
- 6Stir grated Parmesan cheese into the homemade mayonnaise.
- 7Toast sourdough bread and shred iceberg lettuce.
- 8Assemble the sandwich with toasted sourdough, fried bacon, deep-fried tomatoes, shredded lettuce, and homemade garlic-anchovy-Parmesan mayonnaise.
