- 1 1/2 cups water
- 3 cups basmati rice
- 1 tbsp cooking salt (for water)
- 1/2 tsp saffron threads
- 2 tbsp boiling water
- 1 1/2 cups plain yogurt
- 2 large eggs
- 1/4 cup extra virgin olive oil
- 1/2 tsp cooking salt
- 1/4 cup pine nuts
- Fresh coriander
Method
- 1Cube eggplant into 1-inch pieces.
- 2Dry-toast pine nuts in a skillet until golden, then set aside.
- 3Sauté diced onion and minced garlic in olive oil until softened.
- 4Add lamb mince, baharat, cumin, salt, cayenne (if using), tomato paste, eggplant, and water; cook until meat is browned and eggplant tender.
- 5Steep saffron threads in boiling water.
- 6Whisk together yogurt, eggs, extra virgin olive oil, steeped saffron, and salt.
- 7Cook basmati rice with salt until par-cooked.
- 8Layer cooked rice and the spiced meat mixture in an oven-safe dish, pressing firmly.
- 9Pour the saffron-yogurt mixture over the top, ensuring it covers the rice.
- 10Drizzle with olive oil and sprinkle with toasted pine nuts.
- 11Bake in the oven until the rice bake is golden and set.
- 12Garnish with fresh coriander and serve with lemon yogurt sauce or plain yogurt.
