Ingredients
  • 1/4 cup carrots
  • 1/2 cup chopped onion
  • 1/2 cup green peas
  • 1/4 cup fresh coriander leaves
  • 1 green chili
  • 1 cup california walnuts
  • 2 boiled potatoes
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 1/2 tsp salt
  • 1 tsp cumin powder
  • 1 tsp ginger paste
  • 1/2 cup oats
  • Oil for shallow frying
Method
  1. 1Add sliced carrots, quartered onion, green peas, fresh coriander, and one green chili to a food processor.
  2. 2Add 1 cup of California walnuts to the same food processor.
  3. 3Pulse the ingredients in the food processor until finely chopped and mixed into a coarse mixture.
  4. 4Transfer the pulsed mixture to a mixing bowl.
  5. 5Add two mashed or grated boiled potatoes to the mixture.
  6. 6Stir in 1 tsp red chili powder, 1/2 tsp turmeric powder, 1 1/2 tsp salt, and 1 tsp cumin powder.
  7. 7Add 1 tsp ginger paste to the bowl.
  8. 8Grind 1/2 cup of rolled oats into a fine flour in a separate grinder.
  9. 9Add the oat flour to the vegetable and spice mixture.
  10. 10Thoroughly mix all ingredients by hand until a cohesive dough-like mixture is formed.
  11. 11Shape portions of the mixture into small, round, flat cutlets.
  12. 12Heat oil in a flat frying pan for shallow frying.
  13. 13Carefully place the shaped cutlets in the hot oil and fry until golden brown and crispy on both both sides.
